Dreaming about Schoolies

Yes it's one week till exams, yes I'm in year 12, and yes I should be studying, but at the moment all i can seem think about it schoolies at the end of the year! Thanks to my amazing friend Georgia and her many connections we scored a house for schoolies! And just when we thought everything was booked out, she goes and pulls an amazing 5 bedroom house with spa and tennis court out of her ass! That girl...
But of course, schoolies is during the summer time, and would involve wearing minimal clothing (think short shorts, singlets, and yes, the dreaded word - bikinis). I know it's winter and we are lucky enough to be able to hide our muffin tops underneath layers of cardigans and coats. However, to avoid massive starvation in order to slip into those size 8 shorts, i say start eating healthy now, (Well, says Georgia, she's got me hooked on this healthy eating stuff!)
As Miranda Kerr says, "You're body is your temple"
If it means looking like her, I think it's worth a go...
Here's some healthy recipes to kick start you, and some motivational images to get you going!

Mediterranean Roast Vegetable and Chickpea Salad

Time to Make: 45 minutes

Kilojoules: 880kJ


INGREDIENTS:

800g pumpkin, peeled, cut into 2cm cubes

1 large red capsicum, deseeded, cut into 2cm-wide strips

2 red onions, cut into wedges

olive oil spray

100g baby spinach leaves

400g tin chickpeas, rinsed, drained

125ml low-fat natural yoghurt

1 teaspoon sumac


STEP 1: Preheat oven to 200°C. Place pumpkin, capsicum and onion in a single layer on a large baking tray lined with baking paper. Spray with oil and season to taste. Roast in oven, turning once, for 30 minutes or until tender.

STEP 2: Place spinach, roasted vegetables and chickpeas into a large mixing bowl; gently toss to combine. Combine yoghurt and sumac; set aside.

STEP 3: Divide salad between four serving plates and drizzle with a little of the sumac yoghurt. Serve with a crusty wholegrain bread roll.
